Pastelitos


So, I am finally sharing my recipe for cream cheese pastelitos. It's not much of a recipe, but here it is:

1 pkg of Peppridge Farm pastry dough
2 pkgs of cream cheese
1/4-1/2 cups powder sugar, to taste
1-2 tsp lemon juice, to taste
2 Tblsps milk
2 eggs (for egg wash - which is 2 eggs with 1 oz of water beaten together)
1/4 cup syrup (for simple syrup - which is 1/4 cup syrup dissolved in 1/4 cup boiling water)

Mix the cream cheese, lemon juice and milk in a bowl until smooth. Add the sugar gradually until fluffy and desired taste. Set aside (preferably in the fridge).

Cut the defrosted pastry dough into equal size triangles (or any shape, really). Brush half of the triangles with the egg/water wash. Spoon 1-2 Tblsps (depending on how full you want them) of the cream cheese filling into the center of the brushed triangles. Then cover them with the other half of the triangles (unbrushed) and seal them by smoothing the edges together (you can use a fork to serrate the edges, if desired). Then brush the tops of the pastries completely with the egg/water wash. Cook in the oven at 350* for about 30-40 minutes, until they are crispy and browning. Then brush the tops of the pastries completely with the simple syrup and bake in the oven for an additional 4-5 minutes more (that gives them their shine).

You can top them with an icing made of milk and powder sugar. Mmmmm good! TOO good!
